Ingredients/ 材料:

  • 1 pound of beef brisket, cut into chunks|牛腩 1磅,切成大塊狀

  • 2 tbs chopped scallions, chopped |蔥末2大匙

  • 1 tbs minced garlic|蒜末1 大匙

  • 1/2 tbs minced ginger|薑末 1/2 大匙

  • 2 dried chilies, cut in half|乾辣椒 2條,切大段

  • 2 bay leaves|月桂葉 2片

  • 2 start anise|八角 2 個

  • 4 – 5 black pepper corns|黑胡椒粒 4-5 粒

  • 2 tbs soy sauce|醬油 2 大匙

  • 2 tbs Shaoxing rice wine|紹興酒 2 大匙

  • 1 tbs rock sugar|冰糖 1 大匙

  • 1 tbs Chu Hou paste|柱侯醬 1 大匙

  • 1 tbs peanut butter|花生醬 1 大匙

  • 2 tbs vegetable oil|蔬菜油2 大匙

  • 1 pot boiled water|滾水 1 壺

  • 4-5 large tomatoes, cut into chunks|番茄 4-5 大顆,切成大塊

 

Direction/ 做法:

Step 1: 

Let’s blanch the beef brisket in boiling water to remove the impurities. Wash the meat in cold water, drained then set aside.

將牛腩放入滾水中川燙,去除血水。用冷水洗淨後備用。

Step 2: 

Sauté garlic, scallions, ginger and spices in oil until fragrant, then add in the beef brisket. Then we add soy sauce, Shaoxing rice wine, rock sugar, Chu Hou Paste and peanut butter. Continue to sauté the beef brisket until all the ingredients are coming together and taking on the beautiful color. Add boiled water to just cover all the meat. Keep the stew on low heat for one to one-and-half hours.

將大蒜、蔥、薑及香料(乾辣椒、月桂葉、八角及黑胡椒粒)放入油鍋中爆炒,產生香氣後再將川燙好的牛腩放回鍋中。然後加入醬油、米酒、冰糖、柱侯醬及花生醬,持續翻炒牛腩,直到所有的醬料完全融合而牛腩也上色了。倒入滾燙的開水到鍋中,蓋滿牛腩即可。再用小火燉一至一個半小時。

Step 3: 

While the stew cooks, I am going to chop some tomatoes. I really enjoy the chunkiness of tomatoes in this dish, so I am going to cut them into bigger pieces. Add the tomatoes to the stew in the last 15 minutes so they retain their shape and have more of a bite. If you prefer to have the tomatoes to be cooked away, add them to the stew earlier. When the tomatoes are cooked through, the dish is ready to serve.

牛腩燉煮的時候,就可以來切番茄。我喜歡吃稍有口感的番茄,因此我會將番茄切成大塊大塊的。在最後15分鐘的時候將番茄加入鍋中燉煮 以保持他們的形狀及脆脆的口感 如果你喜歡吃熟軟一點的番茄,那就早一點將番茄放入鍋中燉煮。待番茄熟透後,這道菜就完成囉!
